Instructions to make Traditional matoke#4weekchallenge:
  1. Prepare all the ingredients
  2. In a saucepan, add oil and garlic till brown. Add onion and sweat it.
  3. Add capsicum and tomatoes and salt. Let them cook well
  4. Add matoke and potatoes. Pour in the stock and let them cook at low temperature to get a nice thick sauce. Add the carrots and coriander 5 minutes before removing from the heat to prevent from over cooking.
