  1. Make ready 6-10 plantains or as much as you may need
  2. Prepare 2 ripe tomatoes
  3. Take 1 large onion
  4. Get 2-3 tsp tomato paste
  5. Make ready Ginger and garlic minced
  6. Take Green bell pepper

Steps to make Matoke(Plantain) Served With Meatballs and Creamed Spinach:
  1. Boil your plantains without peeling them. It will prevent them from turning black as you peel. It also shortens the cooking time. It takes about 10 minutes
  2. Once ready, run some cold water over them and remove the skin.
  3. Time to make the sauce. Blend your tomatoes, garlic, and ginger. Saute your onions, add in the blended tomatoes, tomato paste and green bell peppers. Add in your spices and let them simmer for a while before adding in your boiled plantains.
  4. Let them cook for a few minutes before turning off the flame.
  5. Meatballs in coconut sauce - - Get your meat balls ready. I had about 5 left over. Saute your onions, tomatoes,tomato paste, garlic, ginger, and any other preferred spices. Add some coconut milk and throw in the meatballs. Let them cook till ready.
  6. For the creamed spinach - - Saute your onions, and garlic till translucent. Pour in a little cream (I used coconut cream) before adding the spinach. Let them cook for a few minutes.
  7. Serve and enjoy. Adjust salt and spices to suit your taste.
